Easy healthy dinner – Halloumi & Couscous Salad

We all have those evenings when we are hungry, we need something quick to eat but we also want to eat healthily. This is where my Halloumi & Couscous Salad recipe comes in handy!


Packet flavoured couscous – I like mediterranean

Packet Salad



Spray a griddle pan with oil and fry slices of halloumi on both sides, for a couple of minutes until there are nice dark griddle lines on the cheese.

Pop the packet couscous in a bowl, add half a can of chickpeas and cover with boiling water until the couscous is just covered. Cover and leave for 5 minutes – or according to packet instructions.

Lay some salad leaves on your plate and season with olive oil and salt. When the couscous is done, add a drizzle of olive oil, fork to plump and add to plate along with the cooked halloumi. Enjoy!
