I have to confess that I don’t actually like mince pies. But most other people do, and it is nice to have a little pile of them ready to offer to guests who drop in over the christmas period. To call this a recipe is a bit of a cheek as it is just really putting together parts of a puzzle, but it serves well at such a busy time and the kids will love helping too!
Makes 12 Mince Pies
1 packed ready rolled puff pastry
1 small jar mince meat
Simply unroll the pastry and cut out 12 circle shapes and 12 star shapes. I use a mug as a circle cutter as it is the perfect size for my baking tray. Spray your baking tray (I use a muffin tray) with a little spray butter and press each disc into each hole. Spoon a slightly heaped teaspoon of mincemeat into each base and top with the pastry star. You can brush these with beaten egg but I don’t usually bother. Cook at 180 degrees for 20 minutes or until bubbling and golden brown.
If mince pies aren’t to your liking you can replace the filling on some with lemon curd or jam.
Cool on a wire rack and serve warm dusted with icing sugar.
