I have to confess that I don't actually like mince pies. But most other people do, and it is nice to have a little pile of them ready to offer to guests who drop in over the christmas period. To call this a recipe is a bit of a cheek as it is just really putting together parts of a puzzle, but it serves well at such a busy time and the kids will love helping too!
Makes 12 Mince Pies
1 packed ready rolled puff pastry
1 small jar mince meat
Simply unroll the pastry and cut out 12 circle shapes and 12 star shapes. I use a mug as a circle cutter as it is the perfect size for my baking tray. Spray your baking tray (I use a muffin tray) with a little spray butter and press each disc into each hole. Spoon a slightly heaped teaspoon of mincemeat into each base and top with the pastry star. You can brush these with beaten egg but I don't usually bother. Cook at 180 degrees for 20 minutes or until bubbling and golden brown.

Cool on a wire rack and serve warm dusted with icing sugar.
