These are really gorgeous pancakes and a great way to get some fruit into the kids at breakfast time. The blueberries just pop and ooze when you cut into them – brilliant!
200g self-raising flour
1 tsp baking powder
1/2 tsp vanilla extract
Mix the dry flour, salt and baking powder and whisk in the milk, egg, melted butter and vanilla until smooth. Stir in the blueberries.
Ladle small round blobs into a hot, non stick pan and cook for about 1 minute until the pancake is bubbling. Flip and cook on the other side for a few seconds until browned. You can keep them warm in the oven while you make more.
Serve with maple syrup, golden syrup or chocolate spread.
