I love weekends as all the family are home together and I love making yummy breakfasts that we can leisurely enjoy. One of my favourites is waffles, which you can serve with fresh fruit, maple syrup, chocolate spread or blueberry syrup.

- 170 g plain flour
- Pinch salt
- 30 g caster sugar
- 290 ml Milk
- 1 tsp vanilla extract
- 1 tbsp baking powder
- 2 egg whites
- 55 g melted butter
Instructions
- Weigh all the dry ingredients into a bowl and add the vanilla, milk and melted butter. Whisk the egg whites until they form soft peaks but are not stiff and fold in.
- Heat up your waffle maker and spray with low cal butter / oil spray. Pour the waffle batter into the maker and follow instructions to cook waffles.
- These waffles are also very yummy made with wholemeal plain flour.
- If you make too many you can freeze them between sheets of baking paper and reheat them in the toaster for another breakfast or for a sweet treat with ice cream for desert.
We alternate these on the weekends with homemade pancakes. I love a treat breakfast at the weekend!
