What We’re Eating

Easter is over and now it’s time for the traditional healthy eating kick that comes after eating chocolate for a week! I’ve got quite a few of the recipes for this week’s menu from the new Deliciously Ella book (available here)*. I’ve already made the gingerbread biscuits from this book and while they aren’t really like the gingerbread I know and love, they are completely edible and very good for you.

Where I struggle with any healthy eating regime is keeping it going. My taste buds crave sugar and I find it difficult to stay on the wagon for very long. I’m hoping that this week because we have run out of unhealthy food and I haven’t bought any more I should stay on the straight and narrow a bit longer!

Oooh and before I forget I should tell you I have today tried a homemade latte made with coconut milk. I must say it was really delicious and I think it deserves a blog post all of it’s own so keep an eye out for that!

So here is what we will be eating this week…

Monday – Black Bean Burgers & Sweet Potato Wedges

Tuesday – Steak & Garlic Potatoes (Quorn for me)

Wednesday – Naan Pizza

Thursdayvegetable curry

Friday – Takeaway night

Saturday – Aubergine pasta

SundayPizza (we have friends staying!)

I know there are a couple of unhealthy evening meals there but I hope that the virtuousness of the others makes up for it!
