As part of moving Bean on from her vegetarian diet I am slowly introducing meat. I thought I would try these as the apple makes them sweet. Didn’t work – she didn’t want to try them. But hubby said that they were nice 🙂 and would be perfect for kids as quite sweet. The recipe is adapted from one of Annabel Karmel’s.
220g chicken fillets
1 apple grated
1 Tsp dried mixed herbs
1 Tsp chicken stock
Grate the apple and squeeze out the excess water. Finely chop the onion in a food processor. Add the grated apple and the rest of the ingredients and mix until the chicken is chopped.
Roll into small balls, coat in the flour and fry in shallow oil for 5 minutes before putting in the oven to keep warm.
