Recipe: Chicken Soup

Another fave to feed my hubby for lunch.  As we don’t eat too much meat I usually steal the chicken carcass from my mother in law’s after Sunday dinner.


1 chicken carcass

1 onion

1 Tbsp vegetable oil

2 diced carrots

Handfull diced swede

1 pak choi thinly sliced

3 Pints chicken stock

Salt / Pepper to taste.


Cook the onion in the oil for a couple of minutes. Add the chopped vegetables (you can use any vegetables you like really) and cook for another couple of minutes. Add the chicken carcass and chicken stock, cover and simmer for 1 hour.

Remove the bones from the saucepan leaving the chicken. Blitz with a hand blender until smooth and season with salt and pepper.

    Does the carcass have to be pre cooked or can be raw?
