This is a really simple mid-week dinner.
I usually prep it while the baby is having her lunchtime nap and then pop it in the oven to cook when we get back from school in the afternoon. It is a really versatile recipe, which you can make different by using different sauces / pasta shapes / flavourings / cheese. Roll with it and cooking on a school night need not be difficult!
1 jar shop bought pasta sauce
300g of uncooked pasta
2 handfuls cooked vegetables (broccoli / carrots / peppers / onions etc)
1/2 can chopped tomatoes
1 tbsp tomato puree
1 packet quorn pieces
Cook the pasta according to the packet instructions.
Pour the pasta sauce, cooked vegetables, tomato puree and chopped tomatoes into a bowl. I blend it up with a hand blender as my child is a fussy eater and doesn’t like lumps and vegetables but you could keep it chunky.
Put the cooked pasta in an ovenproof dish and pour the sauce over and stir in with the quorn pieces. Top with grated cheese. You can leave it now (covered) until later or cook it straight away. Bake it (covered) in the oven for enough time to heat the sauce and the quorn pieces through – 20 minutes to 30 minutes for me on a 200 degree heat.
Serve with garlic bread. Easy peesy.
