Vegan Chocolate Chip and Oat Cookies

Ingredients

  • 1/2 cup dairy free butter I used vitalite
  • 1/2 cup soft brown sugar
  • 1/2 cup caster sugar
  • 1 cup plain flour
  • 1 1/4 cups oats
  • 1 tbsp ground flaxseed
  • 3 tbsp warm water
  • 1/2 tsp baking powder
  • 1/2 tsp bicarbonate soda
  • 100 g chocolate chips
  • 1 tsp vanilla extract

Instructions

  1. Pre heat the oven to 180 degrees celsius and line a baking tray with baking paper

  2. Cream the dairy free butter and sugars together until smooth

  3. Add the flax egg and vanilla extract and beat to combine

  4. In a separate bowl combine all the dry ingredients and add to the sugar and egg mixture.

  5. Mix in the chocolate chips

  6. Roll into 2 cm balls and place 5cm apart on your lined baking tray

  7. Cook for 10 minutes

  8. Leave to cool on the tray for a couple of minutes before transferring to a wire rack to cool completely.
