Vegan Quinoa Chilli

Ingredients

  • 1 cup Uncooked quinoa
  • 2 tins chopped tomatoes
  • 1 tin tomato sauce I used pizza sauce
  • 1 small tin sweetcorn
  • 1 onion chopped
  • 2 peppers chopped
  • 3 cloves garlic, finely chopped
  • ½ chilli, finely chopped
  • 1 teaspoon chilli powder
  • 1 teaspoon paprika
  • 1 teaspoon cumin powder
  • 1 tin black beans drained and rinsed
  • 1 tin kidney beans in chilli sauce
  • 1 teaspoon vegan boullion powder
  • 1 tablespoon olive oil

Instructions

  1. Cook the quinoa according to the packet instructions

  2. Chop the onion, peppers and garlic and cook over a medium heat in the olive oil until soft

  3. Add the tomatoes, tomato sauce and spices to the chopped onions, peppers etc

  4. Add the cooked quinoa, the two tins of beans and tin of sweetcorn

  5. Add the boullion powder and spices to taste

  6. Cook for 10 minutes on a simmer
