Chocolate Chip Welsh Cakes

Welsh cakes are a traditional bake in Wales, and especially around St David's Day. This is a traditional recipe with a modern twist.

Ingredients

  • 1 lb self raising flour
  • 6 oz margarine
  • 6 oz caster sugar
  • 1 teaspoon mixed spice
  • 1 egg
  • 2 Tablespoons milk
  • 100 g chocolate chips
  • 1 pinch salt

Instructions

  1. Sift the flour, salt and spices into a large bowl. 

  2. Rub in the margarine with your fingers until the mixture is like breadcrumbs. 

  3. Stir in the sugar and chocolate chips.

  4. Whisk the egg and mix well into the mixture.

  5.  Add the milk slowly, until the mixture just comes together to form a dough. You may need a little more or a little less. 

  6. Flour your surface and roll your dough to half a centimetre thick. 

  7. Cut into circles with a cookie cutter or upturned mug or cup. 

  8. Grease a non-stick frying pan with butter and cook the little cakes on a medium heat, turning halfway until they are golden brown. 

  9. Leave on a wire rack to cool and sprinkle with sugar to finish.
