Apple and Pear Cake

Ingredients

  • 225 g caster sugar
  • 225 g soft brown sugar
  • 3 large eggs beaten
  • 225 ml vegetable oil
  • 2 teaspoon vanilla extract
  • 700 g self raising flour
  • 1 teaspoon salt
  • 1 teaspoon bicarbonate of soda
  • 2 teaspoon ground cinnamon
  • 2 x apples peeled, cored and diced
  • 2 x pears peeled, cored and diced
  • For the topping.
  • 120 g brown sugar
  • 60 ml milk
  • 100 g butter

Instructions

  1. Mix the ingredients in a stand mixer in the order given. Pour into a large greased cake tin and cook on 170 degrees for 45 minutes or until cooked through.
  2. Warm the topping ingredients in a saucepan and simmer for 5 minutes. Pour over the top of the cooked cake and pop back in the oven for 5 minutes.
  3. Leave to cool on a wire rack before removing from the cake tin.
