Cocoa & Beetroot Cake Recipe

Ingredients

  • 40 g beetroot raw and peeled
  • 20 g cocoa powder
  • 100 g wholemeal flour
  • 1 teaspoon baking powder
  • ΒΌ teaspoon bicarbonate of soda
  • 60 ml vegetable oil
  • 100 g caster sugar
  • 2 medium eggs

Instructions

  1. Pre-heat the oven to 200 degrees celsius / Gas mark 6 and line and 8 inch / 20cm cake tin with greaseproof paper
  2. Grate the beetroot (wear gloves!)
  3. Mix all the other ingredients together until smooth and light in colour
  4. Mix in the beetroot
  5. Pour mix into cake tin and bake in the oven for about 30 minutes or until a knife comes out clean
