This is a super easy recipe for blueberry simple syrup which you can use over ice cream, drizzled over pancakes or stirred into porridge. This recipe uses maple syrup instead of refined sugar so I feel better about feeding it to my children. Word of warning though - it will turn your kids hands purple!!

Ingredients

Scale

250g blueberries (frozen or fresh)

60ml maple syrup

Instructions

Heat up the blueberries in the pan for a minute or two.

Add the maple syrup and bring to a boil, stirring occasionally.

Simmer for 5 minutes until the blueberries have started to break down into a syrup - this will take a little bit longer if you are using frozen blueberries.
