    Recipe: Chocolate Tiffin Fridge Cake

    Last weekend we went away to Lee Abbey (that is another blog post entirely) but whilst we were there we were fed rather spectacularly. A full breakfast, morning coffee, lunch followed by more coffee, afternoon tea consisting of cakes and coffee / hot chocolate and dinner followed by more coffee. To top it off there was hot chocolate at bedtime. Utter bliss.

    Anyway, I digress. My point was that one afternoon there was chocolate tiffin cake. Utterly delicious and I liked the way there was hidden dried fruit in there 🙂

    In my search for a recipe I came across the great blog, We Don't Eat Anything With a Face . Brilliant blog for vegetarian families like ours with great recipes. I adapted the recipe below from there.

    Ingredients:

    100g Butter

    200g Digestive Biscuits (crushed)

    100g dried fruit (chopped) I used raisins and apricots

    4 tablespoon cocoa powder

    2 tablespoon soft brown sugar

    4 tablespoon Golden Syrup

    1 teaspoon vanilla extract

    150g Chocolate

    Melt the butter, sugar, syrup and cocoa powder in a bowl in a low heat in the microwave. Add the crushed digestives and dried fruit and vanilla extract and mix. I chopped the dried fruit up but you could leave it bigger for a chunkier texture. Push it into a cake tin and top with the melted chocolate. Use more chocolate if you prefer a more chocolately cake. Pop into the fridge until it sets and chop into squares.

    I made this with Bean in a few minutes. She really enjoyed crushing the biscuits and stirring the mix. Best of all there is no cooking so give it a couple of hours in the fridge and voila!
