Banana and Maple Syrup Muffins Recipe

The other week I picked up some overripe bananas in the supermarket significantly reduced. I popped them in the freezer waiting for a recipe to use them – and this one is perfect. I thought these would be great breakfast muffins but in all honesty they are yummy at any time of the day!


2 cups plain flour

1/4 cup caster sugar

1/4 Tsp salt

1/4 Tsp bicarbonate soda

1 Tsp baking powder

2 medium / large mashed ripe bananas

3 Tbsp vegetable oil

1/2 cup maple syrup

1/2 Tsp vanilla extract


Mix together the dry ingredients in one bowl and the wet in another. Combine the two and half fill some muffin cases with the mixture. Pre-heat the oven to 180 degrees and cook for 20 minutes or until golden brown.
