Banana and Strawberry Breakfast Muffins
These banana and strawberry breakfast muffins are delicious warm and are a great way to help your little ones have a healthier snack or quick breakfast on the go. They are delicious served warm and are an excellent way to get some fruit into children who otherwise struggle to eat enough.
The fruit makes them nice and sweet so they are especially delicious as a snack too. I like them in the afternoon, warmed slightly and eaten alongside my afternoon coffee!
Banana and Strawberry Breakfast Muffins
Ingredients
- ½ cup caster sugar
- ¼ cup vegetable oil
- 1 egg
- 2 small bananas
- 1 cup flour
- ½ teaspoon baking powder
- ¼ teaspoon bicarbonate soda
- 4 tablespoon orange juice
- ½ cup chopped strawberries
Instructions

Stir the oil and sugar together and add the egg and mashed banana. Sift the dry ingredients together and mix in, alternating with the orange juice. Finally stir in the strawberries.

Dollop into muffin cases and cook on 160 degrees for 20 minutes or until golden on top.
