My husband loves this soup because of the flavour, I love it because it is easy to make with store cupboard ingredients. Everybody has an old onion and some carrots lying in the fridge and we have coriander growing in the garden.
Ingredients
4 large carrots (sliced)
1 onion
2 pints of vegetable stock
1 teaspoon dried ground coriander
handful of fresh coriander
1 tablespoon vegetable oil
Method
Heat the oil in a large lidded pan and sweat the onions and carrots for 5 minutes. Stir in the ground coriander and add the vegetable stock. Simmer for 20 minutes or until the carrots are tender.
Blitz with a hand blender and add fresh coriander to taste. Blend again. This keeps in the fridge for a couple of days and freezes well.

Anytime I use carrots in a soup Hubby and I can never sleep ... and not for any other "bunny" reasons. It must be something in the carrot that keeps us awake. I do like carrots in soup though.
