Whilst I make all sorts of pancakes for the family - my favourite are good old plain American style pancakes. This is a great recipe and really easy. Serve with golden syrup / maple syrup / blueberry syrup or chocolate spread!
Ingredients
200g self-raising flour
1 teaspoon baking powder
½ teaspoon vanilla extract
1 egg
300ml milk
25g butter
Method
Mix the dry flour, salt and baking powder and whisk in the milk, egg, melted butter and vanilla until smooth.
Ladle small round blobs into a hot, non stick pan and cook for about 1 minute until the pancake is bubbling. Flip and cook on the other side for a few seconds until browned. You can keep them warm in the oven while you make more.
