This is a great easy salad couscous recipe and the beauty of it is that it uses up some of those tins of beans you have had sitting in the back of the cupboard!
Simply measure out the amount of couscous that you want, add tinned beans or chickpeas. Add a dash of olive oil. Pour over vegetable stock until the couscous is covered and cover and leave for 5 minutes (or look at the pack instructions). When it is ready, fluff it up with a fork.
