This is a great recipe, really simple with simple ingredients. Absolutely delicious served warm with cream. Recipe originally published in the New York Times and very slightly adapted here.
Ingredients
¾ cup sugar
½ cup unsalted butter
1 cup self raising flour
Pinch of salt
2 eggs
6 plums, halved and de-stoned.
Sugar for topping.
Method
Beat the sugar and butter together. Sift in the flour and salt and eggs. Spread in the bottom of a greased spring form tin. Cover with the plum halves (skin up) and sprinkle a little sugar on the top. Bake in the oven at 180 degrees for 50 minutes or until a knife comes out clean. Leave to cook in the tin on a rack before moving to a serving plate.
Microwave for a few seconds to warm before serving.
