Ginger and Mandarin Pudding
This is a really yummy recipe, easy to make and great for taking to parties and barbecues.
Tinned mandarin segments
Crush the biscuits either with a rolling pin or in a food processor. Add the melted butter until it sticks together. Press this mixture into the base of a bowl / serving dish. Place it in the fridge for a while if you have time so that it can set properly.
Pour the juice out of the tinned mandarins and layer the mandarins over the biscuit base. Whip the cream with a couple of spoons of caster sugar to taste and spread over the top of the mandarins. Keep in the fridge until served.
