We all know that I am a veggie, but the hubby is not, and now and then I like to treat him with a little meat in his diet! This recipe is great as I don't really need to touch the meat and it cooks itself! It makes enough for him to take to work all week. The ingredients are pretty flexible, I usually buy a stew pack of veg for ยฃ1-1.50.
Ingredients
400g beef chopped into cubes (I buy the pre-chopped stuff!)
2 tablespoon flour
Salt and pepper
1 onion
2 carrots
1 large potato
1 parsnip
Beef stock
Glug of red wine
Dash of worcester sauce
3 bay leaves
ยฝ swede
Method
Coat the beef cubes in the flour and season well. Add to slow cooker. Chop all the veg to the same size cubes and add to slow cooker until it is nearly full. Top with beef stock, red wine and a dash of worcester sauce. Add the bay leaves and cook on low overnight until the beef is tender and the vegetables are cooked.

I first learned to make this in cookery class ,longer ago than I care to remember! We didn't put in the wine tho! Still making it and still a very cheap nourishing meal, always tastes better second day!
