I love baking with the children and they love it too. We also love Valentines Day - the sentiment behind the occasion and telling each other how much we love each other is lovely! Nothing says I love you like making a sweet treat for someone and my girls wanted to make something special for the family.
So this year we made white chocolate rice krispie cakes for each other. This is such an easy recipe and a great idea of how you can spend a fun 15 minutes creating something with your children! This is a great recipe for younger children as it is a no bake treat so no oven involved, although you will need to help them to melt the chocolate. My children love stirring the rice crispies and squashing the marshmallow in and decorating it. But best of all they loved eating them! To find out how to make this classic treat read on!
Ingredients

- Rice crispies or other crispy rice cereal
- White chocolate / white chocolate chips
- Cupcake cases
- Pink marshmallows
- Red writing icing

Instructions

Melt the white chocolate in a large bowl over a large pot of hot water set on a medium heat or slowly in the microwave on defrost setting. Personally I think the best way is in the microwave, as long as you have the microwave on a really low setting and stir every 15-30 seconds.
When the chocolate is melted stir through the rice crispies until they are coated in the chocolate.


Scoop into cupcake cases and top with a pink marshmallow.
Draw a little heart on top of the marshmallow using red writing icing.

- 100 g Rice crispies
- 200 g White chocolate
- Cupcake cases
- Pink marshmallows
- Red writing icing
Instructions
- Melt the chocolate slowly (on defrost in the microwave).
- Stir in rice crispies until they are coated in the chocolate.
- Scoop into cupcake cases and top with a pink marshmallows.
- Draw a little heart on the top of the marshmallow using the red writing icing.
Top tip: Line your work surface with parchment paper, plastic wrap or aluminum foil so that it is easier to clean up - small people make a remarkably big mess with melted chocolate!
Rice Crispie Cakes Variations and substitutions
Use different chocolate - You can mix this recipe up quite a bit - use milk or dark chocolate for traditional chocolate rice crispie cakes.
Change the decoration - decorate with rainbow sprinkles or fresh fruit instead of marshmallows. You can also decorate with white chocolate drizzle or melted chocolate, the choice is yours!
Add marshmallows to the mix - some people melt marshmallows into the melted white chocolate making a white chocolate marshmallow mixture to coat the rice crispies in. The gooey marshmallows make this extra sticky though!
Use different cereal - instead of Rice Krispies you could use cornflakes or multigrain hoops like Cheerios.
