I love pancakes and we have them most weekends. I knew that they would be one of the things that I missed a lot when I chose to be vegan. I've already found a vegan waffle recipe to make so that I don't miss out on waffles, but with pancake day looming I knew I had to find a decent pancake recipe so that I could join in all the pancake flipping fun.
I fed these to my whole family one Saturday without mentioning that they are vegan and they didn't notice the difference at all. You can use any non dairy milk, I've tried soya, oat and coconut milk so far and my preference is the Koko coconut milk. All non dairy milks have a different consistency so be mindful that you may need to change the quantity of milk depending. Your mixture needs to be thick enough to hold a pancake shape when dolloped into a hot pan. I even made this recipe using water instead of non-dairy milk and it worked just fine. The pancakes were flatter and less fluffy but they were just as tasty.
Vegan Pancake Recipe
These easy and tasty vegan pancakes are perfect for a tasty vegan breakfast
Ingredients
- 300 g Plain Flour
- 1 tablespoon Caster Sugar
- 2 tablespoon Baking Powder
- ยฝ Tsp Salt
- 1 teaspoon Vanilla extract
- 2 tablespoon Coconut oil melted
- 300 Ml Non dairy milk
Instructions

Mix together all the dry ingredients, using a sieve to make sure that there are no lumps

Add the wet ingredients and whisk until smooth

Grease a frying pan with coconut oil and heat

Dollop the mixture into the pan and cook until bubbles form on the top of the pancakes

Flip and cook for another minute or so until golden brown on both sides

Serve with fruit, melted vegan chocolate, maple syrup or the topping of your choice
