9 Delicious Salads for Spring / Summer
I don't know about you but I find it so much easier to eat healthier when the weather gets warmer. I find myself turning to salads as they are light to eat, really tasty and really good for me. As a vegetarian salads are really great too as there are so many delicious vegetarian options.
To celebrate the good old salad I'm sharing with you today 10 delicious salads you can make and eat this spring / summer. There's a mix of vegetarian and meat / fish recipes here to suit all tastes.
First up is this yummy butternut squash and halloumi salad. Two of my favourite ingredients, I bet this would be nice and filling too.
Cardiff Mummy Says also makes a butternut squash salad, but instead of halloumi she uses feta which would give it a totally different flavour but still so yummy....
My Mummies Pennies also uses feta in her feta and beetroot summer salad. I love beetroot and it adds such a lovely colour.
Have you ever eaten an amazing salad when you are out and tried to re-create it at home? Devon Mama did just that and made this vibrant super salad based on one she had eaten out.
I won't leave out the meat and fish eaters. There are two wonderful recipes on one of my favourite food blogs Charlotte's Lively Kitchen. The first is a classic salmon and new potato salad. This is served warm so great for slightly chillier days when you want a little warming up. The second is a lamb salad which you don't see very often and I imagine would go down very well if you had guests.
Thinking a little outside the box again is Cardiff Mummy Says with her easy to make tomato, feta and basil sticks. Perfect for kiddies these are less daunting than a plate of salad and perfect to make for a party. Also popular with children are rainbow salads. Super Healthy Kids has some great ideas for what vegetables you could include to create a healthy rainbow for your children.
And finally my favourite salad is Halloumi and Couscous. I beef this one up by adding some chickpeas to the couscous which adds a real protein punch. Perfect for vegetarians!

Some of these salads look amazing. I need to be more adventurous with my salads instead of just sticking to ham or egg. I will definitely be trying the butternut squash and halloumi salad. Those are two of my favourite ingredients too.

Yummy! I jazz up most of my salads with feta, but the halloumi looks very tasty indeed.
