We all have those evenings when we are hungry, we need something quick to eat but we also want to eat healthily. This is where my Halloumi and Couscous Salad recipe comes in handy!
Halloumi & Couscous Salad
- Packet flavoured couscous - I like mediterranean
- Tin Chickpeas
- Packet Salad
- Spray a griddle pan with oil and fry slices of halloumi on both sides, for a couple of minutes until there are nice dark griddle lines on the cheese.
- Pop the packet couscous in a bowl, add half a can of chickpeas and cover with boiling water until the couscous is just covered. Cover and leave for 5 minutes - or according to packet instructions.
- Lay some salad leaves on your plate and season with olive oil and salt. When the couscous is done, add a drizzle of olive oil, fork to plump and add to plate along with the cooked halloumi. Enjoy!
