I love brown rice as it is tasty and healthy, but it used to be a pain to cook until I discovered this foolproof method. I hope this helps some of you!
Measure the amount of brown rice you need using a cup. Add this to an ovenproof dish with a lid. Add double the amount of boiling water than rice (e.g. if you used 1 cup of rice, add 2 of water). I like to be generous with my water measurements so there is probably slightly over double the amount of water to rice. Add salt and a knob of butter, pop the lid on and pop in the oven on a moderate heat (gas mark 6?) for one hour. Fluff up the rice and serve.
Sometimes if a dish I am cooking needs more flavour you can add it to the water - add pilau seasoning to the water for curry dishes or use vegetable stock instead of plain water for other dishes.
