This is a fab simple recipe that my mum taught me. So yummy and warming on a winter's night!
Ingredients
4.5 oz pudding rice
1.5 pints water
3 oz caster sugar
2 pints milk
1 teaspoon nutmeg
Method
Add the pudding rice and water to a saucepan and bring to the boil. Continue to heat, stirring continually until most of the water has been absorbed.
Then, stir in the milk and the sugar and heat and stir until the sugar has dissolved. Transfer to an oven dish with a lid, sprinkle with nutmeg and cook on gas mark 6 for an hour or so until it has reached your desired consistency. (some people like it thick, some people like it thin).
My hubby has this served with strawberry jam but I like it just as it is.
