I'm a big fan of using tinned and frozen ingredients to put together a quick and healthy meal. As a working mum of four sometimes I find that we need a really easy dinner option and this easy Quorn chilli con carne recipe is a great one to quickly put in the oven and forget about.

This quorn chilli con carne is also a big hit with my children, just adjust the amount of chilli powder to taste, you won't want it to be too spicy for younger ones.
Even if you aren't vegetarian I would recommend giving this a go - it's the perfect recipe to try for meat free Monday. Quorn mince is much lower in fat than meat based mince so it is the perfect low fat family friendly dinner option.
I love one pot recipes. Just put all the ingredients into a casserole dish and you are done - much less washing up too!
Ingredients
2 tins chopped tomatoes
2 peppers, chopped
2 tins kidney beans in chilli sauce
1 packet quorn mince
Chilli powder to taste
Brown rice to serve
Method
Add all the ingredients into a large ovenproof casserole dish. Don't even bother to defrost the unmince. Stir and pop in the oven, lid on for 1 hour, gas mark 6.
I serve this with brown rice. Here is my recipe for easy brown rice - it takes the same amount of time and is a simple oven job so that's absolutely perfect!
