After a couple of years of wavering between vegetarianism and veganism, I find myself now as a result of Baby N's allergies (CMPA) being a full time vegan. I'm actually really happy with that, because it's an ethical standpoint I really believe in. I do still find it difficult though, I may well have fallen off the wagon if it wasn't for the fact that dairy and eggs would make my little one ill. However, I am thoroughly enjoying making and trying new vegan recipes and I'm gearing up for weaning a vegan baby so family friendly meals are a real focus for me now. I'm actually going to start a family friendly vegan food blog, so watch this space. I just need to find the time to do it!

Vegan Chocolate Chip and Oat Cookies
Can you sense a theme here?! I'm great at sweet treats, but not so good at the savoury stuff, but that is about to change! I'm sharing for you this amazing vegan quinoa chilli recipe. As with all my vegan offerings my family turned their noses up at this until they tasted it when it was declared to be the most delicious chilli ever! If it passes my fussy eater's taste test then it must be good!
We served this chilli with soft taco shells and tortilla crisps and rice but you could use it as a topping for jacket potato, in a wrap, in crispy taco shells and much more, it is really versatile. This made a huge portion too so we kept it in the fridge for leftovers later in the week.
The quinoa and beans provide plenty of protein and fibre. Quinoa is a great food for vegans as it contains all 9 of the essential amino acids and is wholesome and filling. The tomatoes and peppers are rich in vitamin C and antioxidants. The garlic also has numerous health benefits. This recipe is also very cost effective. I haven't worked it out on a price per portion but there aren't any expensive ingredients needed here.

Vegan Quinoa Chilli
A hearty and tasty vegan quinoa chilli
Ingredients
- 1 cup Uncooked quinoa
- 2 tins chopped tomatoes
- 1 tin tomato sauce I used pizza sauce
- 1 small tin sweetcorn
- 1 onion chopped
- 2 peppers chopped
- 3 cloves garlic, finely chopped
- ½ chilli, finely chopped
- 1 teaspoon chilli powder
- 1 teaspoon paprika
- 1 teaspoon cumin powder
- 1 tin black beans drained and rinsed
- 1 tin kidney beans in chilli sauce
- 1 teaspoon vegan boullion powder
- 1 tablespoon olive oil
Instructions

Cook the quinoa according to the packet instructions

Chop the onion, peppers and garlic and cook over a medium heat in the olive oil until soft

Add the tomatoes, tomato sauce and spices to the chopped onions, peppers etc

Add the cooked quinoa, the two tins of beans and tin of sweetcorn

Add the boullion powder and spices to taste

Cook for 10 minutes on a simmer
Tips...
* This recipe is also gluten free, you can serve it with rice, salad or jacket potato or on top of gluten free toast for a quick meal.
*My children are fussy about lumps so I blended one tin of beans with the tomatoes and chopped peppers / onions / garlic to create a smoother base. I left a bit of texture in with the second tin of beans and sweetcorn. Obviously you can adjust the texture to suit the tastes of your family.
