Bounty Style Vegan Chocolate And Coconut Balls

Who doesn’t love a Bounty Bar?! Sadly though they aren’t vegan so I needed to find a replacement pretty quick! I’m the type of person that has a really sweet tooth and I often crave chocolate or something sweet after a meal so I like to keep a little batch of something vegan friendly to hand to stave off the cravings when they come.

These chocolate and coconut balls taste just like Bounty bars but are much better for you and they are vegan and gluten free which is great! They are also really easy to whip together, and your little ones can help you – they’ll love getting their hands messy and rolling these into balls!

Ingredients

  • 250 g Dessicated Coconut
  • 250 ml Coconut Cream
  • 5 tbsp Maple Syrup
  • 1 tsp Vanilla extract
  • 300 g Vegan Dark Chocolate Bourneville or similar
  • 2 tbsp Coconut Oil

Instructions

  1. Blitz the desiccated coconut in a food processor for a few seconds.

  2. Stir in the maple syrup, vanilla extract and coconut cream until it starts to clump together. Adjust the amount of maple syrup until the right texture is achieved.

  3. Form into balls with your hands.

  4. Place on a tray lined with greaseproof paper and place in the freezer for 30 minutes to set

  5. Melt the chocolate over a pan of boiling water and leave to cool for 5 minutes

  6. Dip the coconut balls into the chocolate using a pair of forks and place back on the lined baking tray.

  7. Leave in the fridge until the chocolate sets

These are the perfect little sweet treat to enjoy alongside a cuppa or as an after dinner treat. My husband tried them too and swore that they taste just like Bounty bars, which can’t be a bad thing!
