Normally we eat brown rice but every now and again it's nice to have a little bit of a treat, and this easy basmati coconut rice recipe makes rice that is so sweet and sticky it really feels like a treat! It's absolutely delicious with curry or even chilli and the children love it because it's so sweet and has a lovely soft texture. It's nice and easy to make too don't worry, it just needs you to stir it a little so it doesn't stick to the pan and burn.
Basmati rice is longer than normal white rice and is slightly higher in protein. It is my favourite type of rice because it tastes nice, has a lovely texture and is easy to cook. Ideally you should rinse it in cold water before cooking to remove some of the starch which might make it go sticky when cooked. If you prefer a stickier type of rice then you don't need to worry too much about that step.
In the winter we cook using rice quite a lot, I find it a really cheap, nutritious and filling side to a meal. I love flavouring rice where I can, such as making it with stock cubes or herbs and spices and this coconut rice is a lovely sweet version that goes particularly well with chilli con carne.
Easy Basmati Coconut Rice
Ingredients
- 500 g white basmati rice
- 400 g can of coconut milk
- 2½ cans water
Instructions

Rinse the rice and add it to the saucepan

Add the canned coconut milk

Fill up the empty can with water and put 2.5 cans worth into the sauce pan.

Bring to a boil and then leave to simmer for 8 minutes, stirring every now and then

After 8 minutes turn off the heat and put the lid on for another 5 minutes or until the rice is soft and cooked through.
This recipe is nice and quick and you will have delicious rice in only 20 minutes. It is important to keep an eye on the rice as it cooks and stir it a few times as the coconut milk can burn and cause the rice to stick to the bottom of the pan if you aren't careful.
Not only does coconut milk make the rice taste good, it also has some great nutritional benefits.

I think it makes a great accompaniment to a meal and makes an ordinary meal such as curry or chilli just that little bit more special with the added flavour it brings.
