Coconut Rice Recipe
Normally we eat brown rice but every now and again it’s nice to have a little bit of a treat, and this coconut rice recipe makes rice that is so sweet and sticky it really feels like a treat! It’s absolutely delicious with curry or even chilli and the children love it because it’s so sweet and has a lovely soft texture. It’s nice and easy to make too don’t worry, it just needs you to stir it a little so it doesn’t stick to the pan and burn.
- 500g white rice
- 1 400g can coconut milk
- 2.5 x cans of water
- Add the rice and coconut milk to a saucepan. Fill up the empty can with water and put 2.5 cans worth into the sauce pan. Bring to a boil and then leave to simmer for 8 minutes, stirring every now and then. After 8 minutes turn off the heat and put the lid on for another 5 minutes or until the rice is soft and cooked through.
