You know me, always trying to sneak healthy vegetables into my unsuspecting child...these baked beans carry extra goodness and taste great to boot.
2 x tins baked beans
1 small tub cherry tomatoes
2 cloves of garlic
1 tablespoon curry powder
Chop the onion and garlic and heat in some oil until soft. Half the cherry tomatoes and add to the pan along with the chopped pepper and cook for 5 minutes. Blitz with a handheld blender until smooth. Add the curry powder and baked beans. Adjust curry powder to taste. Serve with sausages (preferably vegetarian!!) and mashed potato.
