Recipe: Leek & Potato Soup


3  leeks, washed well and sliced

2 onions finely diced

2 carrots diced

4 potatoes diced to 1cm cubes

2 garlic cloves chopped

2 chicken / vegetable stock cubes

1.8 Litres boiling water

olive oil

salt and pepper to taste


Cook the leek, onions, garlic and carrots in the olive oil in a large saucepan for 5 minutes. Add the potato and the stock cubes and boiling water and stir well to mix.

Simmer for 10-15 minutes then take off the heat, leave to cool and blend with a hand blender until smooth. Add salt and pepper to taste.
