This is a great recipe for using up apples a little past their best. Great on its own or served with custard as a pudding.
Ingredients
175g caster sugar
2 eggs
½ teaspoon vanilla extract
85g butter
75ml whole milk
125g plain flour
2 tablespoon baking powder
2 apples
Method
Mix the eggs and caster sugar together really well. Warm the milk and the butter and add to the eggs and sugar mix. Add the vanilla and fold in the flour and baking powder. Pour the mixture in a cake tin.
Peel and core the apples and slice them thinly. Place them on top of the cake mixture and push down slightly so that they sink a little. Sprinkle 2 tablespoon caster sugar over the top. Cook in the oven on 180 degrees for 20 - 25 minutes or until a knife comes out clean. Cool on a wire rack.
