My kids and I love these delicious snacky eggy crumpets. They are great for lunch or for a snack. And they are one of the only ways I can get my very fussy 5 year old to consume eggs!
Ingredients
2 crumpets
1 egg
Knob of butter
Dash of milk
Salt, Pepper
Method
Crack the eggs into a shallow bowl, season and whisk up with a splash of milk. Soak the crumpets in the eggy liquid for a couple of minutes until the egg is absorbed into the crumpets.
In the meantime heat the butter in a frying pan. When it is hot, fry the crumpets for a couple of minutes on both sides until they are hot through so that the egg is cooked.
Serve with a sprinkle of sea salt (for mummy) and a drizzle of maple syrup. Or as Bean has them, smothered with chocolate spread! Yummy!
