This is a great easy one pan recipe for a quick and easy mid-week dinner.
Ingredients
1 pack Quorn frozen pieces
2 tablespoon vegetable oil
2 onions
1 green pepper finely sliced
2 teaspoon garlic puree
1 teaspoon Turmeric
1 teaspoon curry powder
1 teaspoon ground ginger
1 teaspoon ground coriander
150 ml natural yoghurt
575 ml vegetable stock
275g basmati rice
Method
Fry the onion, garlic and chopped pepper in the oil until softened. Add the spices and then mix in the yoghurt. Stir in the rice and add the vegetable stock before adding the frozen Quorn pieces. Simmer covered for 20 minutes or until the rice absorbs all the water and is cooked.
