I've had an absolute craving for this in the last week or so and had to dig out a recipe to give it a try. Of course I tweaked it a little. Absolutely delish served warm with hot sauce. Great for lazy winter evenings.
Ingredients
3 large bramley apples, peeled & chopped
3 eggs
200g caster sugar
375g plain flour
280ml vegetable oil
2 teaspoon vanilla extract
1 teaspoon bicarbonate soda
1 teaspoon salt
Method
Whisk the eggs in a large bowl until frothy. Slowly add the sugar and continue to whisk. Add the vanilla and oil. Mix the salt / bicarb and flour together and sift into the egg mixture. Add the chopped apples and pour into a greased cake pan.
Cook on 180 degrees (gas 4) for 1 hr 15 or until a knife comes out clean. Serve warm with toffee sauce.
Toffee Sauce
Place 225g soft dark brown sugar, 125g butter and 60ml of milk in a saucepan and add a pinch of salt. Boil for 3 minutes, stirring all the time.
