    Easy Veggie Pinwheels Recipe

    If you're looking for a really tasty and easy recipe to win over your children, and sneak some extra vegetables into their diet then this easy veggie pinwheels recipe is for you! This recipe is vegan, but you can use dairy cheese if you are vegetarian, and if you eat meat you can add chopped ham or cooked bacon pieces.

    These veggie pinwheels taste like pizza but have some added goodness. They are crispy on the outside and soft in the middle and are the perfect accompaniment for chips, salad, vegetables etc. They are perfect for children who don't like to think that they are eating vegetables as they don't look or taste like they have any!

    In any case, let me show you how easy it is to make these vegan hidden veg pizza wheels!

    The base of this 6 ingredient recipe is a shop bought, pre-made puff pastry. You can of course make your own pastry but when shop bought is this good, I don't see any reason why you would!

    The best thing about this recipe is that you can mix up the ingredients according to what you have available in the fridge. Choose something that grates well or chops down small if you want it to stay hidden. Of course if your child has no problem with chunky vegetables, or you are making this for yourself you can keep the vegetables chopped rather than grated. Be mindful though that if the vegetables are too big you will need to pre-cook them before adding them to the pastry.

    Vegan Hidden Veg Pizza Rolls

    A really easy to make delicious pizza roll recipe with hidden vegetables for fussy eaters

    Ingredients

    • 1 packet ready rolled puff pastry
    • 6 tablespoon tomato puree
    • ½ carrot
    • ½ courgette
    • ½ red pepper
    • 50 g grated vegan cheese

    Instructions

    1. Remove the ready rolled puff pastry from the fridge.

    2. Grate the vegetables or chop them up very small

    3. Roll out the puff pastry and spread the tomato puree all over, according to taste

    4. Sprinkle over the grated veg and top with the grated cheese

    5. Roll into a swiss roll shape

    6. Cut into 2cm thick slices and place on a baking tray lined with greaseproof paper

    7. Cook them at 180 degrees for 20 minutes or until they are puffed up and golden brown.

    Notes: Try this recipe with different vegetables like grated aubergine, grated parsnip and even grated apple to keep it sweet. You could add sweetcorn, onions, spring onions, grated sweet potato and different varieties of pepper too.
