The other week I picked up some overripe bananas in the supermarket significantly reduced. I popped them in the freezer waiting for a recipe to use them - and this one is perfect. I thought these would be great breakfast muffins but in all honesty they are yummy at any time of the day!
Ingredients
2 cups plain flour
¼ cup caster sugar
¼ teaspoon salt
¼ teaspoon bicarbonate soda
1 teaspoon baking powder
2 medium / large mashed ripe bananas
3 tablespoon vegetable oil
½ cup maple syrup
½ teaspoon vanilla extract
Method
Mix together the dry ingredients in one bowl and the wet in another. Combine the two and half fill some muffin cases with the mixture. Pre-heat the oven to 180 degrees and cook for 20 minutes or until golden brown.
