You must all know by now how much I love pancakes for brekkie at the weekends and what can be better than pancakes with chocolate chips?! I much prefer American style pancakes as they are so soft, thick and fluffy and these American style chocolate chip pancakes make the perfect sweet breakfast treat.
We are tight budgeting at the moment so I actually used chocolate buttons that we had left from Christmas in this recipe instead of chocolate chips and just chopped them a little. It worked really well actually as there was some good sized melted chocolate in there...mmmm. The trick is to freeze or at least chill the chocolate chips so that they take longer to melt and you reduce your chances of having melted chocolate chip pancakes!

Ingredients
- 250 g Plain Flour
- 4 tbsp caster sugar
- 2 tbsp baking powder
- ยฝ tsp salt
- 4 tbsp vegetable oil
- 2 eggs
- 350 ml milk
- 100 g chocolate chips (chilled or frozen)
Instructions
- Mix the dry ingredients together.
- Mix the wet ingredients together and mix the wet and the dry
- Add the chocolate chips
- Spray a large frying pan with low calorie spray and spoon the mixture in dollops into the pan.ย
- Cook for about a minute on the first side and 30 seconds on the other side - wait until the pancake bubbles on top and is firm enough to flip before turning over. The pancake should be golden brown on both sides.
- Serve immediately.
Serve the pancakes straight away, either on their own or with strawberries, bananas, maple syrup or if you are feeling really indulgent, some chocolate sauce.
