    The joy of quick pancakes

There is something special in our house about pancakes at the weekend. Weekends are the time when we can all sit down to breakfast in the kitchen together as a family and so a treat breakfast is definitely in order. We chill out with pancakes, coffee, juice and pop a cookery programme on the TV and just spend some quality time together.

We love pancakes and I try to make them at the weekends as the children enjoy them so much and we have a bit more time. However we still have swimming lessons and football practice to get to so we don't have all the time in the world. This is where this really quick and easy recipe for blender pancakes comes into it's own. It takes minimal fuss and keeps the washing up to a minimum!

You will get delicious fluffy and easy American pancakes with this super quick and easy pancake recipe.  Now pancakes are whipped up in no time at all so there's no excuse not to make every day a pancake day!

    What if I haven't got a Nutribullet?

If you don't have a Nutribullet that's not a problem, these can be whipped up in most blenders or food processors, or by hand if you wish. There are plenty of Nutribullet alternatives. We like the Nutri-Ninja blender too or you could even try a budget blender such as this one from Breville. The principle is the same whichever brand of blender that you use, pop it all in and off you go!

This recipe makes a lovely soft and fluffy pancakes, but without all the whisking of pancake batter, I think it must be because the Nutribullet blends everything up nicely and whisks it up in a way.

How to make pancakes with a Nutribullet

There isn't really anything complicated to this! Simply throw all the ingredients into the Nutribullet and whiz together. So simple and takes no time at all.

Dollop small blobs of the mixture onto a hot frying pan and cook on one side for a minute until bubbles start to form. Depending upon how non stick your frying pan is you might want to spray it with a thin layer of vegetable oil to stop the pancakes from sticking.

Flip over and cook on the other side for another 30 seconds until both sides are brown.

Serve warm with whatever toppings you choose. My girls like chocolate spread and strawberries and bananas and I like maple syrup. Enjoy!

That NutriBullet looks like such a handy appliance. I don't have a blender because they're so bulky and my kitchen's fairly small, but this looks really compact.

I've been wondering what people actually use a Nutribullet for, really interesting to see a practical use for it.
